Beef Totchos a la Laura

Totchos, so what are they anyway? They’re Nachos but instead of tortilla chips you use tater tots.  Let’s say you have leftover taco meat. By the way I only address hamburger in this recipe but you may use chicken, pulled pork, beans, or shrimp anything you’re inspired by or have in the refrigerator.  Besides, chips only get nasty, naked of toppings, and soggy toward the bottom. I plan on setting up a Totchos Bar for Super Bowl but wanted to share the concept with all of you so you could have fun with this tasty treat Sunday during NFL Championships on January 20th and during Super Bowl. Potatoes, spicy and topping of your choice who could be happier. That is until your favorite team doesn’t win.  Hey, you still had a good afternoon/evening with friends and family. Enjoy!

Beef Totchos a la Laura

BASIC TOTCHOS

  • cooking spray
  • 2 1-lb bags frozen tater tots
  • 1 pound ground beef
  • 1 package taco seasoning mix (Ortega, Taco Bell, Old El Paso), prepared as directed
  • beans (black beans, red beans, etc.), optional
  • 1 jalapeño sliced, optional
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded

ADD ONS

  • sour cream
  • guacamole
  • freshly chopped cilantro
  • green onions
  • cooked bacon bits
  • avocado
  • salsa
  • lettuce
  • tomatoes

Method:

1. Preheat oven to 450° and grease a 9″-x-13″ baking dish with cooking spray. Add tater tots and bake until crispy, 20 minutes. Leave oven on.

2. In a large skillet over medium heat, prepare taco filling following package directions

3. Top tater tots with taco filling and with optional ingredients and cheeses

4. Bake until warmed through and cheese is melted, 10 minutes

5. Top with “Add On” options of your choice
