Spinach Salad

Way back when we lived in Colorado Springs there was an eclectic restaurant on the corner of Boulder and Tejon streets. For the time, they served some interesting food. One of their signature dishes was their spinach salad. Laura and her friend Sue ate there and Laura loved the salad. So of course we had to try to make it at home.

Yesterday, I had a craving for steak and french fries. We were looking for some kind of salad that would go with it. We saw a bag of spinach and decided to make the spinach salad. It calls for 1000 Island Dressing. I think home-made is much better than bottled. Normally it is made with mayonnaise and ketchup. Rather than ketchup, Laura suggested I use some left-over shrimp cocktail sauce we had in the fridge. Wow, did that make a difference! Shrimp cocktail sauce is just Heinz Chili sauce and horseradish sauce combined. Here is the recipe for the dressing:

 

Makes 1 1/2 Cups dressing

INGREDIENTS

1 cup, mayonnaise
1/4 cup, Heinz Chili Sauce
1/4 cup, prepared horseradish sauce
2 tablespoons, dill pickle – finely chopped
1 tablespoon, pickle juice – chopped

METHOD

  1. Blend all ingredients together.

For the salad combine:

Baby spinach
Canned Mandarin Oranges
Green olives
Toasted sunflower seeds
