Ham and Bean Tacos

Again in our quest to use up leftovers we had a small bit of ham. Here is what we did last night.

A great way to use left-over ham. We think it tastes better than regular tacos!

Serves: 2

Ham and Bean Tacos


INGREDIENTS

8 taco or tostada shells
1 cup, cooked ham – diced
1 tablespoon, butter
1/2 white onion – finely diced
8 ounces, refried beans
1/4 cup, sour cream
1/2 teaspoon, chili powder
1/2 teaspoon, cumin powder
1 dash, garlic powder
1 C., Monterrey jack cheese – shredded
lettuce – shredded
1 med., tomato – chopped
taco sauce – warmed

METHOD

  1. Warm taco shells according to package directions.
  2. Meanwhile, in a small skillet, brown the ham and onion in butter. Stir in refried beans, sour cream, chili powder, cumin and garlic powder. Cook over low heat, stirring constantly, until heated through.
  3. Spoon ham filing into warm taco or tostada shells. Sprinkle cheese and lettuce on each.
  4. Top with chopped tomato and taco sauce.
