Mediterranean Chicken

This one has always been a favorite of my parents and me. It’s a relatively simple meal once again utilizing the chicken breast technique that I’ve used a few times now. It’s a great, quick, healthy meal that uses lots of veggies and creates a flavorful sauce.

2 Chicken Breasts
1 Onion, Sliced
1 Red Pepper, Sliced
1 Green Pepper, Sliced
2 Cloves Garlic, pressed
2 Cups Chicken Broth
1/2 Cup Dry Sherry
8 Anchovy Filets, minced
16 Kalamata Olives
Lemon slices

Serve with white Rice

First make the chicken breasts as specified and set aside. Then add the onion and peppers and cook until slightly done. Then add the garlic and anchovy and cook slightly before adding the chicken broth and dry sherry. Cook down slightly to thicken sauce before re-adding chicken and accumulated juices. Add olives and cook for about 10 minutes. Serve over rice with salt and pepper. Garnish with lemon slices.
