This has quickly become a great bit of comfort food for me in quarantine. It’s fast, fun, very tasty diner staple that can be thrown together quickly but is also a great way to learn basic sauce making techniques.
Also, for starters, I use Pillsbury biscuits in a tube. I can make homemade biscuits and have done so. But honestly the Pillsbury biscuits are so good that the effort of doing so is worth the payoff. So bake those off first and use them.
2 Pillsbury Biscuits
1/2 Cup loose breakfast sausage (I recommend Johnsonville)
1 Tbs Butter
1 Tbs Flour
About 1 1/2 Cup milk
Salt and Pepper
Paprika for garnish
Start by browning the sausage and rendering the fat from it. Remove it from the pan and try to keep the fat. Sift in the flour to make a roux, depending on how fatty the sausage is you’ll most likely need to add butter to make sure the roux is the right consistency. Let the roux cook a bit before slowly adding the milk and vigorously whisk to make the gravy. I like to add the sausage bits back into the the gravy. Then season with salt and pepper. Ladle over the biscuits and garnish with paprika.
