In my new Chinese cookbook there is a chapter on cold dishes. This one caught my eye because I like radishes. I just finished making it and wow it is addictive. You are going to need chili oil for this, here is the recipe from a previous post. You can also buy chili oil at most Asian markets.
Ingredients:
2 bunches radishes
3/4 teaspoon salt
1 teaspoon sugar
2 tablespoons soy sauce
2 tablespoons chili oil, with it’s sediment
1/2 teaspoon sesame oil
Method:
1. Trim the radishes. Smack them lightly with the side of a large knife or cleaver. Do not smash them, just crack them a bit.
2. Add the salt and mix well. Set aside for 30 minutes.
3. Combine the sugar and soy sauce in a small bowl. Add the chili and sesame oils.
4. When you are ready to eat, drain the radishes, which will have exuded a good amount of water, and shake them dry. Pour the prepared sauce over them, mix well and serve.
