Ham and Bean Tacos

Today is National Taco Day, so in light of that I present our favorite taco. A great way to use left-over ham.

Ingredients:

8 taco or tostada shells
1 cup cooked ham, diced
1 tablespoon butter
1/2 white onion, finely diced
8 ounces refried beans
1/4 cup sour cream
1/2 teaspoon chili powder
1/2 teaspoon cumin powder
1 dash garlic powder
1 C. Monterrey jack cheese, shredded
lettuce, shredded
1 medium tomato, chopped
taco sauce

Method:

1. Warm taco shells according to package directions.

2. Meanwhile, in a small skillet, brown the ham and onion in butter. Stir in refried beans, sour cream, chili powder, cumin and garlic powder. Cook over low heat, stirring constantly, until heated through.

3. Spoon ham filing into warm taco or tostada shells. Sprinkle cheese and lettuce on each.

4. Top with chopped tomato and taco sauce.
