We made this last night and it is so good I wanted to share it with you. No recipe, just get some baby arugula, cooked and peeled beets (we get ours ready-made from Trader Joe’s) some goat cheese and some pine nuts.
I toast about 2 Tablespoons of pine nuts in a small frying pan, taking care not to let them burn by tossing them frequently. Cut the beets into bite sized chunks. Break off small chunks of goat cheese and combine everything together.
I make a vinaigrette with good olive oil, lemon juice, Dijon mustard and some kosher salt and pepper and toss that into the salad. Done!
