Pimento Cheese Spread

We found this article about using Pimento Cheese Spread as a topping for a hamburger and thought it was a great idea. If you are from the South, Pimento Cheese Spread is a very common item. The recipe is from Katie Workman. She used smoked paprika, but neither Laura or I like the smoked flavor very much. Feel free to use it though if you like the flavor. I admit, we have not made this yet. We are trying to pare down in anticipation of traveling back to Oregon soon, but we will definitely try it when we get there.

Pimento Cheese Spread


INGREDIENTS

1/2 cup, mayonnaise
3 ounces, cream cheese – softened
2 tablespoons, red onion – minced
1 teaspoon, Worcestershire sauce
1 teaspoon, bourbon
1/2 teaspoon, Sriracha
1/4 teaspoon, paprika – preferably smoked
1 pinch, cayenne
1/2 sharp cheddar cheese – freshly grated
1 7 ounce jar, pimientos – drained and minced
kosher salt – to taste

METHOD

  1. In a mixing bowl, combine the mayonnaise, cream cheese, onion, Worcestershire sauce, bourbon, Sriracha, paprika and cayenne.
  2. Stir in the cheddar cheese and pimentos, season with salt to taste and add more hot sauce if desired.
  3. Pack into a container and refrigerate for at least on day and up to seven.
