Had some leftover Tater Tots from another meal and we were craving Sloppy Joes. Instead of buns, I got the idea to make a Casserole out of the tots and the sloppy joe meat. It turned out great. Really easy to make.

Sloppy Joe Tater Tots Casserole |
INGREDIENTS
1 lb, lean ground beef
1 cup, chopped onion
1 can, tomato sauce – (15 oz)
1/2 tablespoon, packed brown sugar
1 tablespoon, Worcestershire sauce
1 tablespoon, yellow mustard
1/2 teaspoon, salt
fresh ground pepper
1 tablespoon, pickle juice
1 bag, tater tots frozen potatoes – (32 oz)
2 cups, shredded Cheddar cheese
1/4 cup, chopped dill pickles
METHOD
- Heat oven to 350°F.
- Oil a 13×9-inch (3-quart) glass baking dish.
- In 10-inch nonstick skillet, cook beef and onion over medium-high heat 7 to 9 minutes, stirring frequently, until brown; drain, and return to skillet. Stir in tomato sauce, brown sugar, Worcestershire sauce, mustard, pickle juice, pepper and salt. Cook 2 to 3 minutes, stirring frequently, until boiling. Taste and adjust seasoning. If you like it a bit sweeter add more brown sugar.
- Place half of the frozen potatoes in single layer in bottom of baking dish. Pour beef mixture on top. Top with 1 cup of the Cheddar cheese, then the remaining potatoes, then remaining 1 cup of cheese.
- Bake 45 to 55 minutes or until casserole is bubbly and potatoes are lightly browned. Top with chopped pickles.
