Bone Marrow – Little Understood

Bone marrow is a delicacy that unfortunately is little known in the US. Bones add important flavor to soups, stocks and braises, but marrow bones are hard to come by for some reason in the States. Here in Europe we are more fortunate.  James found these bones in our local store and started to utter, yum yum yum. For those of you who have never had it, we assure you marrow is unctuous, soft, and buttery. These were braised with beef and a lot of wine. Jim and I left the table with one thought in our mind, yum yum yum!!!
